Scotland Supper - Split Pea Soup and Cornbread

For me, the memory of Scotland could not be complete without the thought of a wonderful lunch in a very beautiful castle one rainy afternoon.  The lunch was very simple, split pea soup and cornbread.  Whenever I make this lovely supper for my family, I remember the wonderful time spent during that vacation.
This is a delicious soup cooks itself, great idea for a busy night.  The cornbread is super easy to make, and my kids love helping me stir it up.  Best of all, both of my kids love this supper and eat with no complaints!
